halibut fra diavOlO

AuthorHeather WallaceCategoryDifficultyBeginner

Fra Diavolo means "Brother Devil" in Italian.

In America diavolo sauce is generally used with shrimp or lobster but fish pairs extremely well with it. We've tried it with halibut and cod, both were very good. You can use any mild fish you choose...I just love halibut.

I love spicy food so this was immediately a favorite of mine.

I first fell in love with diavolo sauce in Denver on a pizza, and discovered Giada De Laurentiis' recipe for shrimp fra diavolo but my husband doesn't like shrimp so I made an adjustment and came up with this recipe which is now a go to. Seriously, I want to try diavolo sauce on everything! lol

For The Sauce...
2

In a medium skillet over medium heat sauté 1 chopped medium onion in a drizzle of olive oil until translucent, about 5 Minutes.

3

Add 3 cloves of minced garlic, 1 cup of dry white wine, 14-ounces of diced tomatoes, 1 teaspoon red pepper flakes, 1/4 teaspoon of dried oregano, salt, and pepper to taste.

Simmer for 10 Minutes until sauce thickens slightly.

For The Halibut...
4

Drizzle 3 halibut steaks with olive oil and sprinkle both sides with 1 tablespoon of Ancho chili powder, 1 teaspoon of garlic powder, salt and pepper.

5

Place empty cookie sheet in oven and heat broiler on high for 10 Minutes. This will get the pan very hot so the fish cooks from both sides.

Place halibut steaks on the hot cookie sheet and broil for 6 Minutes.

6

Take a butter knife and insert vertically into the thickest part of the fish for 5 seconds and remove.

Carefully and quickly tap the flat side of the knife to your lip to test the temperature.

If the knife is warm it is ready to serve, if still cold you will need to cook a minute more.

7

Remove halibut from pan and spoon sauce over top.

8

Sprinkle with fresh parsley and serve.
