Some people call these cookies Mexican wedding cookies, others call them Russian tea cakes or snowball cookies....they have different names, but whatever you decide to call them we can agree on one thing...they are melt in your mouth delicious little bits and are addicting!

I had every intention of making these and giving them as a care package to my brother in a Christmas tin this year, but one taste and my husband shook his head and said with his mouth full, "you aren't giving these away". So, sorry bro...these cookies are already over half gone the first night! I'll need to make them again and double the batch I guess for any to get to you. lol

 ½ cup pecan halves
 1 ½ oz organic powdered sugar (about 1/3 cup)
 1 cup all-purpose flour
 ¼ tsp kosher salt
 1 tsp vanilla extract
 1 stick unsalted butter, cut into cubes
For Dusting...
 2 oz organic powdered sugar (about 1/2 cup)

Gather Ingredients...

Make the Dough...

Preheat the oven to 350° and line a baking sheet with parchment paper.

In the bowl of a food processor combine ½ cup pecan halves, 1 ½ oz organic powdered sugar (about 1/3 cup), 1 cup all-purpose flour, ¼ teaspoon kosher salt, 1 teaspoon vanilla extract, and 1 stick unsalted butter that has been cut into cubes.

Pulse to form a stiff dough.

Bake...

Scoop dough into tablespoon-sized balls and roll in 1/4 cup of organic powdered sugar in a shallow dish.

Once all balls have been rolled in sugar place them all back into the shallow dish and roll around to pick up more of the sugar.

Place dough balls onto a parchment-lined baking sheet about 1 inch apart and bake for about 18 minutes until lightly golden on the bottom.

Remove from oven and let cool completely on the baking pan.

Sprinkle and Enjoy...

Once cookies are completely cool sift the remaining 1/4 cup of organic powdered sugar over the top so they are coated.
