What do you enjoy more, the anticipation on Christmas Eve or the excitement of Christmas morning? Whatever your favorite is you can enjoy it this year with a warm mug of my copycat Starbucks gingerbread latte.
Cuddle up on the couch with your favorite person in front of the fireplace with the lights lit on the tree...add a little bit of extra cheer this year with a cup of happiness because we for sure need it this year!
In a medium saucepan whisk ¼ cup lightly packed brown sugar, ½ cup granulated sugar, ¾ cup water, 2 tablespoons of molasses, 1 teaspoon ground ginger, ½ teaspoon ground cinnamon, and 1 teaspoon vanilla extract over medium heat.
Bring to a low boil, reduce heat and simmer stirring occasionally for 5 minutes.
Transfer syrup to a heatproof container and shake well before using.
In a 12 ounce mug stir 2 tablespoons of the gingerbread syrup with ¼ cup strong brewed coffee.
Heat 1 cup of barista blend oat milk (or any milk of choice) for 45 seconds in the microwave, then froth and pour into the mug.
Top with more oat milk foam and sprinkle with nutmeg or ground cinnamon.
