Can't decide between chia seed pudding or a smoothie? Now you don't have to with these chia dragon fruit smoothie jars. They are the best of both worlds. Now the only choice you will be stuck making is to eat it with a spoon or a straw.
I only just recently started liking chia seed pudding but I always loved smoothies...so it just seemed like the natural thing to combine the two right?!
I like to make a big batch of chia seed pudding at the beginning of the week and change up the smoothie flavor and fruit toppings during the week...easy and healthy meal prep!
I like using the Wilderness Poets freeze-dried dragon fruit powder which is the same one I use in my Starbucks copycat recipe for the Dragon Drink. Plus it gives the smoothie that vibrant pink color that I love!
For the Chia Seed Pudding...

In a medium-sized bowl whisk together 1/2 cup almond milk, 1/2 cup of plain Greek yogurt, 1 tablespoon of maple syrup, 1/2 teaspoon of vanilla extract, and a pinch of kosher salt until smooth.

Whisk in 2 tablespoons of chia seeds and let sit for 30 minutes.
Stir again and refrigerate overnight.
For the Dragon Fruit Smoothie...

In a blender combine 1 frozen banana, 1 cup sliced strawberries, 2 tablespoons freeze-dried dragon fruit powder, 2 tablespoons maple syrup, and 1/2 cup almond milk.
Blend until smooth adding more milk if needed.
Assemble...

Divide chia seed pudding between 2 small mason jars and top with the smoothie.
Top with coconut chips, sliced almonds, or fresh fruit and enjoy!
