beanless beef chili

Tyler Florence is an amazing chef, and is known to have a really good chili recipe among many other dishes…this is my variation on his chili with a few of my own changes and additions. I kicked up the spice with more chipotle peppers and added roasted red peppers to deepen the flavor as well as changing up the spices to make it my own.

I love taking an already good recipe and changing the flavors to create something different…especially when the result is a success!

For everyone out there that likes beans but they don’t like you…this is your chili!

turmeric chicken sOup with spinach and pOtatOes

Turmeric is an anti-inflammatory plant that is related to ginger, whose rhizomes (roots) are used in recipes such as soups, stews, and curries. They are also dried and turned into powder, supplements.

It’s tasty when minced like ginger and incorporated into your favorite smoothie or soup…like this one! This delicious healing soup is perfect at any time of the year whether you want the antioxidant and anti-inflammatory benefits or just want to try something new.

Curcuminoids found in Turmeric have been found that they may aid in reducing pain. Studies have been done with curcumin, a type of curcuminoid, for cancers, colitis, diabetes, surgical pain, and as an ingredient in mouthwash for reducing plaque. Additionally, the National Center for Complementary and Integrative Health (NCCIH) has studied curcumin for Alzheimer’s disease, rheumatoid arthritis, and prostate and colon cancer.

It can help improve digestion and heal your gut to protect against IBS or IBD. All around, it’s a pretty good addition to your spice rack. Just make sure if using Turmeric supplements to check with your doctor first.

french OniOn sOup

Sink your spoon into the Ooey Gooey, melty bubbly cheese…

…down past the pieces of floating French Bread into a deep, dark amber liquid. As you pull out your spoon little bits of caramelized onion fall down the string of cheese that dangles down into the steaming bowl of soup.

You can’t help but enjoy every spoonful of this French Onion Soup!

chicken nOOdle sOup

I love autumn when the leaves turn colors and there’s a crispness in the air that’s not quite cold enough to be uncomfortable.

When the smells of pumpkin spice, nutmeg, and cinnamon are in the air everywhere you go. It’s time for visiting the orchard to get apple cider and donuts, curling up on the couch in a fluffy robe with a cup of tea….or soup!

It’s definitely a time for comfort food, and chicken noodle soup is on the top of my list to make. This recipe I’ve developed over the years and I’ve tweaked it so many times that I couldn’t tell you what the original recipe was. I crave this soup all the time, even in the summer when it’s hot, it’s that good!

white chicken chili

Need a quick weeknight meal that will taste like you spent hours cooking?

This white chicken chili only takes twenty minutes to simmer and you can throw it all in one pot which makes for a quick cleanup as well. I love taking my time in the kitchen preparing meals, but recently my schedule has changed with work and I need to adjust my time cooking during the week to be a little bit quicker than normal. With this recipe only taking 20 minutes to simmer and limited prep, it’s perfect for me to make on those nights I won’t make it home till late. 

The first few times making this I used a can of drained Swanson’s chicken breast but then decided to try it with a rotisserie chicken from the market, the results were perfection! A little bit of diced avocado on the top is also very good. I used tortilla strips that are for salad toppings but have also used crushed tortilla chips to garnish but you can top your chili however you want…the possibilities are endless!

So the next time you need a quick dinner try this chili instead of stopping for takeout, you won’t be disappointed.
