This year I was on a mission to find a new St.Patrick’s day recipe…and what came out of my endeavor was this delicious boozy shepherd’s pie type of dish but instead of mashed potatoes on top, I used fluffy homemade buttermilk biscuits! Get your fork ready and don’t miss out on making this skillet for Paddy’s day…break out that stout!

I stumbled upon the Jelly Toast Blog and was inspired to remake their Sausage Biscuit Skillet with Guinness version but with my own spin. Her photography of the dish was so well done and it had my mouth watering so I just couldn’t resist making a version of it myself! A few tweaks here and there and it came out amazing!

Don’t like it hot? No problem, just remove the seeds and membranes from the serrano pepper or omit it all together…but if you really like it hot just add another pepper.

I absolutely love finding new and exciting soup recipes (or old recipes) and revamping them and experimenting with the ingredients…I’m always on the lookout for unique soups to try out. I’ve adapted this recipe from an old Homestyle Chicken cookbook I have to my tastes and I love it…a unique soup to add to my collection to make again and again!!

What’s more fun to add to pasta than tiny balls of mozzarella?? Pair those little babies with some balsamic sun-dried tomatoes and it’s perfection!

This is my take on Maggiano’s dish Pesto Perlini Hand-Cut Fettuccine Recipe…I changed up the pesto for its sister pistou and used chicken sausage.
I’ve recently become obsessed with pistou which is basically a simplified version of pesto…and it is delicious!

With the mountain of issues that are causing stress right now, it’s very important to take care of ourselves and do something that makes us happy. It’s been scientifically proven that taking time to savor something can increase our happiness. Whether it’s a bubble bath, a cup of tea, taking a walk on a nice day…or savoring a really good meal. Challenge yourself this week to take a moment each day and savor something…pause and think about the experience and how much you enjoy it.

This recipe is a great start to that week of savoring…the fluffy biscuits and the warm thick stew that wraps around you like a blanket when the days are getting cooler. Turn off the tv while you eat, place your electronic devices on silent for those few moments while you eat dinner…be “in the moment”, and enjoy it.
