The sweet taste of blackberries fused with a sweet simple syrup melds delightfully with the crisp, fresh taste of mint in this dangerously delicious summer libation.

I love a good mojito, and of all the mojitos I’ve tried this is by far my favorite. Sweet and crisp, full of flavor…for how much rum is in it you really don’t taste the alcohol.

In all actuality, I think that I would call this my favorite alcoholic beverage. Don't get me wrong, I love a good glass of wine but this mojito is just a notch above! Pace yourself while enjoying this though-they go down really smooth and are highly addicting!

Yields1 Serving

For the simple syrup:
 1 cup Granulated sugar
 1 cup Water
For the cocktail:
 6 Blackberries, more for garnish
 1 Lime
 8 Mint leaves
 2 oz Simple syrup
 3 oz White rum
 ½ cup Club soda ,soda water, or mineral water
 Ice

Make Simple Syrup . . .

Combine 1 cup of granulated sugar and 1 cup of water in a saucepan and bring to boil. Cook until sugar dissolves, stirring occasionally, let cool. 

You will have enough simple syrup to make about 8 drinks. Place remaining simple syrup not used in a bottle to store in the refrigerator for future use.

Muddle & Mix . . .

Place 6 blackberries, 8 mint leaves and the juice from 1 lime in a tall glass and gently muddle together to release the oils. I find that using a Pampered Chef Mix N' Chop works great for muddling.

Add 2 ounces of simple syrup, 3 ounces of white rum, 1/2 cup of club soda (or mineral water), a spent lime half, and ice to the glass.

Crushed ice is best in this drink but if you don't have crushed ice then use cubed,

Stir slightly and garnish with a few more blackberries and a lime wedge.

This is a recipe that is best made per glass and not in a pitcher.
