I love the Dragon Drink at Starbucks, which is basically the Mango Dragon Fruit Refresher with coconut milk added. But let's face it, trips to grab a sip can get expensive and they are loaded with ice so it's gone in two seconds...you then catch yourself trying to suck every last bit from the bottom of the cup through your straw! I have created the perfect copycat recipe that you can make at home-with free refills!
Put as much or as little ice in as you want...but use caution: you could end up liking this copycat better than the Starbucks one.
Additionally, Dragon Fruits, or Pitahaya, which come from a cactus-like tree in the desert and are loaded with antioxidants, fiber, vitamins B & C, and is anti-inflammatory. So it's good for you and the color from the freeze-dried dragon fruit powder creates the most vibrant pink color that makes it fun to drink!
Cut the ends off of one dragon fruit and slice in half lengthwise.
Remove the skin from the flesh of the fruit with your fingers or with a large spoon.
Discard the skin and chop the fruit into small pieces; set aside.
In a quart size mason jar (or any container with a lid) pour in 2 cups of 100% apple mango juice.
Add 2 teaspoons of freeze-dried dragon fruit powder and whisk until most of the lumps are gone.
Pour 2 cups of whole fat coconut milk into the juice mixture and a few ice cubes.
Cover the jar with a lid and shake thoroughly to mix.
Serve over ice and add a few tablespoons of diced dragon fruit.

Hi Keri, Thank you for asking-you can buy the freeze-dried dragon fruit powder from Wilderness Poets Website or from Amazon.
Amazon has many other brands of it as well that you could try but I’ve only used the Wilderness Poets so far. I hope you enjoy the Dragon Drink! I can’t always find fresh dragon fruit in the stores so I don’t always use the fresh fruit in the drink but it is so refreshing!!
