dark chOcOlate cheesecake with peanut butter ganache

A seriously indulgent treat that is well worth the effort to make this baked cheesecake…silky smooth dark chocolate that is like velvet on your tongue and topped off with a peanut butter ganache and chocolate shavings. Do I have you drooling yet?

Cheesecake is a well-known favorite of my husband’s and he always asks for it on our anniversary. So this year’s recipe is a variation of my Dove Dark Chocolate Cheesecake but with darker chocolate and I changed up the ganache.

trOpical granOla

This tropical granola will take you to the beach without you having to fly or drive anywhere! One bite and you will hear the waves crashing on the sand.

I love granola so I’m always trying to create new flavors to try. I prefer homemade granola over store-bought, and since I’ve been having a really bad yearning to go back to Saint Lucia I thought the next best thing would be to put some tropical flavors together to hold me over until my next trip…whenever that might be. This granola delivers with dried mango, pineapple, and coconut chips…the only thing missing is having actual sand in my toes!

I love it paired with coconut flavored yogurt and fresh mango as a parfait. We ate a lot of fresh mangoes while we were in Saint Lucia and it transports me instantly to having breakfast by the ocean.

mOcha cinnamOn chOcOlate chip cOOkies

Is there anything better than a warm gooey chocolate chip cookie straight from the oven?? Coffee lovers will go crazy over these mocha cinnamon chocolate chip cookies!
With just a bit of espresso powder that gives a depth of flavor and flaky sea salt for that slight salty bite. They could become your next favorite cookie. Make sure to use chopped chocolate instead of chips though for that ooey-gooey chocolate ribbon when you pull it apart…excuse me while I wipe the drool from my mouth.

sparkling cherry chip cupcakes

Delightful and exquisite…soft, fluffy, moist, and studded with maraschino cherries these sparkly cherry chip cupcakes are almost too pretty to eat!

When my sister asked if I could make cherry chip cupcakes for a friend’s wedding as a gift from her I jumped at the challenge to create a cupcake that was as elegant looking at it was delicious. I had never made cherry chip cupcakes or cake before so I set out to find a trustworthy recipe that I could slightly tweak to my own liking and settled upon one that I adapted from Tessa Huff. And while I didn’t want the cupcakes to be super pink for the occasion I decided not to add any pink food coloring that makes that traditional pink-tinged cherry chip cake we all know. Adding a small amount of maraschino cherry syrup to the buttercream gave a very slight cherry flavor but again, didn’t overly make the frosting pink allowing the sparkly cherry to really pop on the top of the cupcake.

Edible glitter gave just the right amount of elegance for a special occasion while not being too over the top.

white chOcOlate key lime macadamia nut cOOkies

Spring is right around the corner and I’m having major tropical vibes right now…or I just want to be somewhere tropical. Whatever the case may be, the key lime-infused sugar adds brightness to these cookies that will lift your mood and give you a little taste of paradise.

After a cold winter the 50-degree weather we are having feels like a real heatwave and has me craving sunnier dishes…is that a thing? Sunnier dishes?? lol
And bonus…the lime gives us green for upcoming St. Patrick’s day! While it might not be traditional Irish flavors the green color still counts as being festive, right?! 😉

These cookies were an inspiration of Bravetart’s base chopped chocolate chip cookie recipe zhuzhed up with a bit of lime for an altogether delightful bite!
