cider braised pOt rOast with caramelized OniOns and sweet pOtatOes

Autumn has arrived and I have been craving everything apple cider this year! I was inspired to create this dish with hard apple cider and give a fall twist after visiting my local orchard…and it was amazing!!

It’s been rainy and cold this week so something warm and hearty was definitely what was needed. After taking a trip for some cider donuts at the orchard I knew I had to make this dish…several times actually lol. The hard cider gives it just a hint of extra flavor and the added sweet potatoes really brought an extra level of autumn to the dish. And bonus, the leftovers get even better as they marinate in the flavors overnight and they make great sandwiches the next day!!! A recipe for a leftover pot roast sandwich is coming soon. 🙂 Stay tuned!!

dark chOcOlate cheesecake with peanut butter ganache

A seriously indulgent treat that is well worth the effort to make this baked cheesecake…silky smooth dark chocolate that is like velvet on your tongue and topped off with a peanut butter ganache and chocolate shavings. Do I have you drooling yet?

Cheesecake is a well-known favorite of my husband’s and he always asks for it on our anniversary. So this year’s recipe is a variation of my Dove Dark Chocolate Cheesecake but with darker chocolate and I changed up the ganache.

pasta primavera

This pasta primavera is a light and fresh version that is now our favorite go-to dinner for an easy weeknight meal. Meatless and packed full of flavor, you’ll be back for a second serving for sure!

My tips for success here…try it and try it again, switch up the veggies, and add your favorites. Red pepper would be amazing in it. Any veggies will work so try out different combos to switch up the flavors to your liking.

trOpical granOla

This tropical granola will take you to the beach without you having to fly or drive anywhere! One bite and you will hear the waves crashing on the sand.

I love granola so I’m always trying to create new flavors to try. I prefer homemade granola over store-bought, and since I’ve been having a really bad yearning to go back to Saint Lucia I thought the next best thing would be to put some tropical flavors together to hold me over until my next trip…whenever that might be. This granola delivers with dried mango, pineapple, and coconut chips…the only thing missing is having actual sand in my toes!

I love it paired with coconut flavored yogurt and fresh mango as a parfait. We ate a lot of fresh mangoes while we were in Saint Lucia and it transports me instantly to having breakfast by the ocean.

mOcha cinnamOn chOcOlate chip cOOkies

Is there anything better than a warm gooey chocolate chip cookie straight from the oven?? Coffee lovers will go crazy over these mocha cinnamon chocolate chip cookies!
With just a bit of espresso powder that gives a depth of flavor and flaky sea salt for that slight salty bite. They could become your next favorite cookie. Make sure to use chopped chocolate instead of chips though for that ooey-gooey chocolate ribbon when you pull it apart…excuse me while I wipe the drool from my mouth.
