beef and guinness stew

How do you celebrate St. Patrick’s Day? This year try my Beef and Guinness Stew that is hearty, delicious, and satisfyingly savory!

Personally, I like to make some sort of tasty dish reminiscent of either Irish traditions or some sort of Irish ingredients…

Sometimes I’ll do just pops of green colors in a dish…but this year I decided to make this delicious stew with Guinness in the broth and it turned out amazing! Guinness is a favorite of my husband’s, and I love the depth of flavor it gives to a dish when cooking with it.

Just beware of adding salt to any dish made with Guinness because as it cooks it becomes salty. So make sure to taste to adjust the salt to your liking near the end of cooking. I don’t add any additional salt into the stew besides salting the meat when browning.

Irish soda bread, mashed potatoes, and even French bread all go really well paired with this dish.

Yes, it takes a little bit of extra time to make but the slow braising makes for a much more tender stew and is so worth it!!

And for all the non-drinkers, dry January just got a little bit more exciting!! Not to mention New Year’s celebrations!
I happened upon a brand of non-alcohol spirits called CleanCo Clean T that is a UK company that sells tequila, rum, gin, and vodka…so since I don’t really drink I decided to give the tequila a try. I mean…I miss a good mixed drink! And let me tell you it did not disappoint at all! It tastes just like the alcoholic version.
I can’t wait to try the other spirits they offer. Give them a try and get creative, do a little drink mixing and some baking with it and let me know what you create.

Día de Los Muertos, or Day of the Dead is upon us and this year I decided to make these festive skull cakes that are drop-dead delicious!

While I don’t generally celebrate the Mexican tradition of Día de Los Muertos I most certainly can appreciate the celebration to honor and remember deceased loved ones. I’ve always loved the costumes and makeup associated with the holiday…the splashes of colors and the dancers all decked out. It would be amazing to go and see and be a part of the celebration!
