dublin stOut cupcakes

A triple Irish threat in cupcake form…so Irish you may have an Irish accent after eating one!
Moist and delicious this chocolate stout cake is topped with a caramel Irish whiskey swiss meringue buttercream swirled with white chocolate Irish cream!

The flavors go so well together it can only give you good luck!

The cake is so moist and gets better the day after you’ve made them, the flavors enhance and become something that you have to give your whole attention to!

I made these for my husband to take to work to share but quickly came to regret not keeping more for us at home…although that may have been a good thing so we didn’t end up eating them all ourselves…

guinness cOttage pie

This Guinness Cottage Pie is the perfect way to celebrate St. Patrick’s Day this year!

Beef and vegetables slow simmered in a savory Guinness broth to perfection and then topped with olive oil mashed potatoes and baked…it’s the ultimate comfort food for a cold night!

Shepherd’s pie is traditionally made with ground lamb while Cottage Pie is made with ground beef, while both are equally delicious in their own way I’ve kicked it up a notch or two with the addition of stout to deepen the flavors….and it’s delicious!

peanut satay ramen

Spicy Peanut Satay Ramen, a big steaming bowl of slurpy noodles in the middle of winter is just about one of the best comfort foods!

There’s no need for takeout when you can make it better at home. Especially when it’s super simple and fast to whip up any night of the week! I love the creamy peanut butter taste and the warm spices of the chili oil combined in this dish, as a matter of fact I love it so much I’d rather enjoy planting my face in a bowl of this ramen than go to the local ramen restaurant near me! I know a recipe is a really good one when it’s better than any restaurant’s version of it that I’ve had anywhere.

You can make it as spicy as you want by putting as much or as little chili oil as you dare…and this recipe makes two large bowls of ramen, which could easily be divided up into 4 servings. But let’s face it…you’re gonna want a large bowl to slurp all to yourself!

spicy blackberry gin sOur

This Spicy Blackberry Gin Sour is refreshing with just the right amount of sweetness and heat!
The jalapeño slices give off a slightly smoky flavor that will heat you up during the cold weather!!

It tastes almost like a spin on a Bramble, which I love, yet has it’s own unique flavor.
And, if you don’t like gin you can switch it up for vodka…
If you don’t have blackberry syrup just throw in a 1/2 ounce of simple syrup and a few more blackberries when muddling the fruit and you will achieve a similar result.

The fun thing about cocktails is that you can really make them your own by switching up some of the ingredients…play around and see what you come up with and share what you create!

pOlar berry latte

This Polar Berry Latte is a luxurious brew of white chocolate, hazelnuts, and blackberries that’s like being wrapped in a warm fuzzy blanket! I mean, is there anything better than being snuggled up on the couch in a fluffy blanket with a cup of coffee? Maybe a puppy or two on your lap and a good book???

With just the right amount of blackberries to give it a slightly fruity taste but not enough to overpower all the other flavors and the oat milk pairs perfectly with the white chocolate creating something that is one of the best lattes I’ve ever made…or had!
I can confirm that it was a hit with my husband as he sat there with his mug looking at it with a mad scientist look on his face with whipped cream on his lip lol! Give it a try this winter and see if it doesn’t give you warm-fuzzy feelings! Or make you stare crazily into your cup lol!

A cocktail variation of this may be coming around the corner…we’ve already tried a few different liquor combinations that have been absolutely delicious! What liquor would you like to see in a Polar Berry cocktail combo??

apple pie dOnuts

A delicious cinnamon rolled cider donut topped with warm apple pie filling, buttercream, and don’t forget the slight drizzle of caramel sauce!
It’s like having a cupcake, donut, and slice of apple pie all at once and it’s amazing!

I was inspired to make these after trying them at a bakehouse close to the eye veterinarian where we take our pups. At first bite I knew I had to try to recreate these…

From time to time we have to take our dogs to the eye vet, and it’s a good hour away for us so we usually like to make a trip out of it. On the way, we listen to some true crime podcasts and do a little online reconnaissance of restaurants in the area, plan a takeout dinner, and maybe a little cup of joe from a coffeehouse somewhere in the area. That’s how I found these little babies…they looked so good in the clear container sitting on the dashboard on the way home…it was torture looking at them!

After a couple of test runs, I’ve perfected making them! It takes a little bit of effort but with the help of some apple cider concentrate, they taste legit like you just walked out of a cider mill! Even though there is already snow on the ground I’m not ready for winter and not willing to give up fall yet…well at least not till the day after Thanksgiving!
