turmeric chicken sOup with spinach and pOtatOes

Turmeric is an anti-inflammatory plant that is related to ginger, whose rhizomes (roots) are used in recipes such as soups, stews, and curries. They are also dried and turned into powder, supplements.

It’s tasty when minced like ginger and incorporated into your favorite smoothie or soup…like this one! This delicious healing soup is perfect at any time of the year whether you want the antioxidant and anti-inflammatory benefits or just want to try something new.

Curcuminoids found in Turmeric have been found that they may aid in reducing pain. Studies have been done with curcumin, a type of curcuminoid, for cancers, colitis, diabetes, surgical pain, and as an ingredient in mouthwash for reducing plaque. Additionally, the National Center for Complementary and Integrative Health (NCCIH) has studied curcumin for Alzheimer’s disease, rheumatoid arthritis, and prostate and colon cancer.

It can help improve digestion and heal your gut to protect against IBS or IBD. All around, it’s a pretty good addition to your spice rack. Just make sure if using Turmeric supplements to check with your doctor first.

cheesy garlic parmesan spinach spaghetti squash

Healthy food doesn’t have to be boring. A healthy dish can easily become something you crave and be just as soul-soothing as any comfort food.

This dish hits all those notes…the only downside is, that it’s hard to put down your fork when eating it because it’s so good! Cheesy, creamy, and garlicky; this is just my type of recipe.

The first time I tried spaghetti squash was this recipe from the blog Peas and Crayons, and I was hooked! I made a few minor alterations but kept the recipe pretty much the same because it was amazing, it is so good I’ve made it half a dozen times already.

I’m so excited to try new recipes with spaghetti squash- a big shout out to Jenn from Peas and Crayons for such an amazing recipe. She created a dish that was easy to follow, easy to make and on top of being healthy(ish) it tasted delicious. My husband made a comment that he never thought that he would ask for spaghetti squash…but he has, several times over.

il diavOlO lasagna

Try lasagna in a bold new flavor with this remake of my original recipe. The diavolo sauce is a tongue satisfying spicy sauce that will leave you with a desire to slide your fork through more of the cheese filled layers.

Let’s see if this becomes your new favorite lasagna recipe…you can control how spicy it gets be adding more red pepper flakes or reducing the amount, but I like a little spice in my life. I like to feel the heat but still be able to taste all the flavors in a dish, so to me, this has the perfect amount.

mOcha chOcOlate icebOx cake

Indulge in this rich, but incredibly light and airy dessert on hot summer days when you don’t want to turn on the oven.

Any recipe from Ina Garten is pretty much guaranteed to be a success…this one is no exception! This is my review of her Mocha Chocolate Icebox Cake that is absolutely a chocolate lover’s dream…

I get a lot of my inspiration from Ina, and have taken a lot of her recipes as a base and adjusted ingredients or tweaked it here and there to create my own recipes. She is to me, the queen of the kitchen and I just love her recipes. This one definitely deserves a shout out.

The mascarpone cheese and Kahlua give it a Tiramisu taste but is also very different at the same time because of the chocolate chip cookies.

A few tips:
Ina suggests using Tate’s Bake Shop chocolate chip cookies, but I used Chips Ahoy which still turned out good but I believe that the next time I make this I will try using the Tate’s ones to give it a little better flavor. You could also bake your own cookies but that would defeat the no-bake benefit.

Use thin, crispy cookies to give a little texture to the cake and to allow the cream to be the star of the recipe.

Make sure your mascarpone cheese is room temperature so that it whips better with the heavy cream and won’t separate while whipping.

All in all, my review is that this is a super easy, but delicious dessert that will taste like you spent a lot of time making….it will be our little secret that you didn’t. 🙂

If you crave a good pizza but are tired of the same old take-out, sink your teeth into this cheesy slice!

The sauce is my variation of Giada De Laurentiis’ spicy Diavolo sauce and then topped with the earthy flavors of spinach, goat cheese, and artichokes. So the next time you have an urge for pizza, instead of ordering out, make this mouthwatering one at home!

My first time having Diavolo sauce was actually at a wood fire pizza restaurant in Denver called Pizza Republica- it was the sauce on their Diavola pizza that had smoked mozzarella, spicy salumi, and hot capicola.

I cheated big time when I had the pizza there because I’m not supposed to eat nitrates…but it was so worth it!

limOncello tiramisù

Tiramisù (translating to “pick me up” or “cheer me up” in Italian) is classically made with the ladyfingers dipped in espresso and layered with a whipped custard mixed with mascarpone cheese. I’ve made this variation where the ladyfingers are soaked with a lemon juice and Limoncello syrup that makes a very bright and refreshing dessert.

You can make this dessert ahead of time, it gets better as it sits- the ladyfingers soak up all the flavors. It’s perfect for entertaining…and your guests would be so impressed with your fancy Italian dessert that most people think is only a “restaurant dessert”.
