beanless beef chili

Tyler Florence is an amazing chef, and is known to have a really good chili recipe among many other dishes…this is my variation on his chili with a few of my own changes and additions. I kicked up the spice with more chipotle peppers and added roasted red peppers to deepen the flavor as well as changing up the spices to make it my own.

I love taking an already good recipe and changing the flavors to create something different…especially when the result is a success!

For everyone out there that likes beans but they don’t like you…this is your chili!

Maggiano’s Little Italy restaurant has these amazing little moon-shaped lemon cookies that are like a soft sugar cookie but bursting with flavor. We always overstuff ourselves when we eat there but somehow find room to savor the lemon cookies when we thought we couldn’t eat anymore.

The restaurant is about an hour away from where we live so when we go we really enjoy it and tend to eat more than we should. But with this recipe, we can now enjoy a copycat of those delicious little cookies! Mine may not be moon-shaped, but they won’t disappoint in flavor!

Is it breakfast or a snack? Have it for both…this granola hits all the fall flavors and colors too…I mean just look at those yellow hues with the apricots and golden raisins! Not to mention the apple chips-it’s fall on a spoon.

I enjoy eating granola plain by the handful, with milk like a bowl of cereal, or layered with yogurt as a parfait (which is especially good).

I gave my husband a container on the way to work thinking he would eat some of it with his yogurt for breakfast and on our break, we could snack on it…well let’s just say he really liked it because he ate it all. No snack that day! lol
