Try lasagna in a bold new flavor with this remake of my original recipe. The diavolo sauce is a tongue satisfying spicy sauce that will leave you with a desire to slide your fork through more of the cheese filled layers.
Let's see if this becomes your new favorite lasagna recipe...you can control how spicy it gets be adding more red pepper flakes or reducing the amount, but I like a little spice in my life. I like to feel the heat but still be able to taste all the flavors in a dish, so to me, this has the perfect amount.
In a large skillet over medium heat cook 1 lbs of pork sausage until browned, drain grease from the pan.
Stir in 1 chopped medium onion until translucent, about 5 Minutes
Add 3 cloves of minced garlic, 1 cup of dry white wine and simmer for 3 Minutes.
Add 2 (14-ounce) canned (or boxed) diced tomatoes and 2 (6-ounce) cans of tomato paste, 1 1/2 teaspoon red pepper flakes, 1/2 teaspoon of dried oregano,1 tablespoon of dried basil, 1/2 teaspoon of salt.
Simmer uncovered for 30 Minutes stirring occasionally.
Preheat oven to 375°.
Meanwhile, while the sauce is simmering, cook pasta according to package directions in a large pot of lightly salted water and drain; set aside.
In a medium bowl add 2 beaten eggs, 3 cups of cottage cheese, 1/2 cup of Parmesan Cheese, 2 tablespoons dried parsley, 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
Stir until combined and set aside.
In a 9x13" pan layer half of the noodles, half of the cottage cheese mixture, half Mozzarella Cheese, and half of meat sauce.
Continue to layer with remaining noodles, cottage cheese, and meat. Top with the rest of the Mozzarella.
Bake for 30 Minutes, or until the top is golden and cheese is melted.
and Enjoy!
