I have only just recently started liking guacamole.
It may have to do with me not finding the recipe I really like…but my search for the perfect guac is over.
I love this recipe that I found from Knorr…with a few alterations of my own I have come up with my version that is a creamy and spicy guac.
This creamy & spicy guacamole goes perfect with tortilla chips, tacos, tostadas…anything you want to eat it with! Including eating it by the spoonful.
Cut avocados in half and remove the pits.
Take a large spoon and remove from skins.
I use my trusty Mix N Chop from Pampered Chef to mash 2 avocados in a medium bowl. It's much easier and quicker than using a fork.
Then add 2 Tbsp of lime juice to keep the avocados from browning… and well, to keep it from looking like poop :).
Add 1 tablespoon of chicken base (I use Better Than Bouillon Chicken Base), 1/4 cup mayonnaise (I like Hellmann’s), 1/4 cup chopped red onion, 2 tablespoons chopped fresh cilantro, and 1 tablespoon of either jarred jalapeno slices chopped or fresh jalapeno. I used a jar of hot jalapenos I had in the fridge.
Stir until combined and creamy.
