I love the Fiesta Party Seasoning from Tastefully Simple!

It's the one item that I keep buying over and over again...and no I'm not getting paid to say this. 

No other fajita seasoning compares to the flavor that is packed in that bottle...and as a dip it is amazing! A little bit of mayo and sour cream mixed with the seasoning...dip some fresh sliced red peppers-oh my word!! My favorite! It is the perfect flavor for this dish, of course, you can use any fajita seasoning you want...but trust me when I tell you this one is better.

Roasting fresh tomatoes under the broiler gives another flavor entirely to any dish rather than using a can of diced tomatoes. My husband doesn't like tomatoes but can tolerate diced tomatoes in dishes...so I decided to try my hand at roasting a few I had leftover from my garden. They passed the test, he liked them and ate several bowls full of this spicy pasta dish. If you don't like heat then I would suggest cutting the amount of the fiesta seasoning in half...but I like a bit of heat. You can also substitute roasting your own tomatoes with a 10 to 14 ounce can of diced tomatoes if you prefer but I highly recommend firing up your broiler and giving it a try!

 6 tbsp extra virgin olive oil, divided
 15 plumb or grape tomatoes, cut in half
 ½ tsp dried basil
 12 oz package of chicken sausage, sliced
 3 tbsp Tastefully Simple Fiesta Party Seasoning (or any fajita seasoning), divided
 1 medium red onion, chopped
 1 green pepper, chopped
 1 red pepper, chopped
 5 cloves garlic, minced
 2 1/2 cups chicken broth
 8 oz penne pasta
 salt and pepper

Gather the Ingredients . . .

Roast Tomatoes . . .

Preheat broiler on high.

Cut 15 plumb or grape tomatoes in half and place cut side down on a baking sheet. Drizzle with 2 tablespoons of extra virgin olive oil and sprinkle with 1/2 teaspoon of dried basil, salt, and pepper to taste.

Place under heated broiler for 5-10 minutes until the skin of tomatoes start to char. Make sure they don't burn, so check them every couple of minutes.

Remove from oven and set aside to cool slightly.

Brown Sausage & Saute Vegetables . . .

In a large heavy skillet heat 2 tablespoons of olive oil over medium heat.

Add 12 ounces of sliced chicken sausage, and 1 1/2 tablespoons of Tastefully Simple's Fiesta Party Seasoning (or any fajita seasoning), cook until browned, about 2-3 minutes per side; stirring often.

Remove from pan and set aside.

Drizzle remaining olive oil to pan and add 1 medium chopped onion, 1 medium chopped green pepper, 1 medium chopped red pepper, 5 cloves of minced garlic, and 1 1/2 tablespoons more of fiesta seasoning; cook until tender.

Remove from pan and set aside.

Cook Pasta . . .

Pour 2 1/2 cups of chicken broth into pan, and add roasted tomatoes and 8 ounces of uncooked penne noodles.

Bring to boil then reduce heat to low, cover and cook for 15 minutes or until pasta is cooked.

Add reserved chicken sausage and cooked vegetables, stir and cook until heated through.

Serve hot.
